Is this good for a $2500 gaming setup?

Greetings. Not seeing any issues with what you have picked out, looks very solid.

A 5600X CPU is a better balance since both CPUs are OP for this GPU and will get near exact same fps at 100% GPU utilization. You can save on that and possibly go up in GPU for big game improvement over more CPU cores. The 5800X only makes sense if multi tasking or core dependent work task are involved like editing/rendering. Check out some of Hardware Unboxed videos on that motherboard. I seem to remember they really did not care for it for some reason but I could be confusing it.
Everything else is review leading top notch stuff, very good choices indeed.
