Let’s say we’re trying to stay in the $2500-$3000 range all in.

Any major issues with what I propose? Anything an overkill or bottleneck for the rest of the system? Suggestions on cooling?

Greetings, sorry for the delay. I do not see any issues with what you have picked out, that all looks very solid to me. The only thing I would really note is that you only have 1TB of storage and with any sort of gaming / video editing, that space can run out quite quickly.
