So this is my first time building a pc, so I have zero idea of what I'm doing for the most part. So can someone help me build a pc that can run Minecraft/Skyrim with 300-500 mods, for at least 10 hours straight, cause my current computer is struggling a bit.
The thing that will be the determining factor for Minecraft and lots of mods is RAM. You need a lot to store the current game state. Therefore I recommend at least 32GB of RAM.
$3000 is a generous budget for a PC, so you could look for the best of the best that's currently available:

DDR5 ram (https://www.microcenter.com/product/646756/gskill-trident-z5-rgb-32gb-(2-x-16gb)-ddr5-6400-pc5-51200-cl32-dual-channel-desktop-memory-kit-f5-6400j3239g16gx2-tz5rk-black)
3080 TI GPU (https://www.microcenter.com/product/637879/asus-nvidia-geforce-rtx-3080-ti-tuf-overclocked-triple-fan-12gb-gddr6x-pcie-40-graphics-card)
These components can be found probably for cheaper on other sites, but processor prices are unbeatable at microcenter (and you can price match)
$3000 is a very generous budget for gaming so you can do about whatever you'd like part wise, you could go the AMD route for your build as well.
Here's an AMD recommendation under/around your budget: https://www.microcenter.com/site/content/custom-pc-builder.aspx?load=ffd87e58-9ca5-4684-a675-cda58c0a17c9
