240GB is quite small by current standards for the m.2 Why not just get the 1TB for now and after a while it is easy to add a second one when you need it later. The WD "Green" series are PCIe 3. But MC is (currently) running a $20 off on the WD Black 1TB that's PCIe 4: WD Black SN750 SE 1TB 3D TLC NAND PCIe Gen 4 x4 NVMe M.2 Internal SSD - Micro Center
Everything else looks good. I have one of those 6600 Eagle cards, it's good.
All looks good. I'd agree on just bypassing the 240gb SSD and go with the 1tb as your boot drive.
