There's so much emphasis on gaming and streaming computers, but considering these PCs rely heavily on graphics, are these also good for graphic design and photography? I would think there would be a high turnover of graphics so a gaming pc just needs to be fast on transitioning between graphics rather than increasing the size of the graphics being used, if that makes sense.
There are also so many options for components, is there a guide or assistance with putting together a system?

You can use a gaming PC for both. The important task is deciding what graphics card to buy. For what you described I'd recommend this as a starting point:
