I do know Minecraft servers are single core. Won't need Windows for the OS.

I've been thinking about upgrading my minecraft server also. right now it's on an old laptop with a A6-9225 which has a hard time keeping up. I'm thinking either a 5600G or a 5700G since I will have it do double duty and watch my 3 security cameras. The G variants have built in graphics to avoid buying a card and they also can work with just the included cooler.
I'm also considering the i3 13100 but it is only quad core.

What motherboard, ram, SSD though? I have no idea.Not sure about the choices but this is what i sorta slapped together.

I'm going to get whatever is the current motherboard with cpu bundle deal when I'm ready to buy it.
You don't need the thermal paste. The CPU cooler comes with it already applied.
A minecraft server won't need that 1tb hard drive, is there some other plan you have for it? And get an m.2 type SSD not a 2.5 SATA type. The difference is huge and MC server wants the fastest disk possible.

I added it for backups. Though I guess to cut down on cost, probably could figure something else out.

If you tar/zip the backups they really dont take much space and how long do you need to keep old ones?
I'm going to get whatever asus microatx motherboard with a 550 chipset is the best deal. Maybe ASrock. I don't care much for Gigabyte because there are too many horror stories of their support if something goes wrong.
