Hello!
I'm happy to offer some advice, I just have a couple questions first so that I work with you to give the best advise possible to get your computer just right for you.
What will you be using the computer for? (Gaming, Video or Photo Editing, School, Business, Graphic Design, Web Browsing, Streaming, ect.)
What's your budget or preferred range to stay near? If no strict budget, are you just looking to get the best performance per for the cost ("bang for your buck")?

1080p gaming is what the use will be and around 1000 plus or minus say 300 bucks

Gotcha.
I'd say your build there looks pretty good overall, except 1 compatibility issue.
The Ryzen 5 5500 you have there uses an AM4 socket and is not compatible with your selected AM5 motherboard. This Ryzen 5 8500G is a good replacement that's still AM5.
I would also recommend a bit more powerful of a Power Supply to leave room for support for upgrades if you want to do regular upgrades to the PC over time. This way you won't need to buy a new power supply when you make upgrades later and need more power, and power supplies usually come with much longer warranties should they fail over time (5 years on the one you selected).
I recommend this Seasonic 850W PSU (has a 10 year warranty!)

Also is the 7600xt worth it or will the regular with 8gb be alright I've seen mixed reviews saying that the extra gb in the xt is a cool add on but not really necessary

Iam currently on a 1660 with a ryzen 5 2600 how much of a upgrade will it be

Either the 7600 or the 7600xt will be a pretty significant boost for you and either one will be about 15% more powerful than the processor I recommended. (that leaves room for trying 1440p if you want!)
The extra 8GB of RAM on the GPU for the XT is definitely worth the extra ~$50 in my opinion.
The processor upgrade should provide a nice boost (about 50% all around overall) and get your gameplay smoother overall.
