Need Help Choosing Parts for Portable Build

Hello. I'm new to building computers- have always bought pre-built machines. I mainly use my computer for running audio and video production software which tends to utilize a lot of CPU and RAM, so m past few machines have always been on the higher end performance wise. I do a lot of work bouth at my home studio, and my commercial studio which is down the street from my house. Because I need portability, about 7 months ago I bought an HP laptop which has been giving me all sorts of problems in the past few weeks. It's high spec'd (i9-13900H, 64GB RAM, 4060), and the thermals are very poorly designed so it stays in a constant state of thermal throttling making even non-demanding programs sluggish and laggy. I've finally got approved to return the machine and get refunded. Now I want to go back to a desktop build (I don't need battery power, I just need portability, and both of my workspaces have monitors and peripherals to easily plug into) so I've ditched the idea of a laptop.
I put together this build, and I'm hitting my budget on it. I wanted to go i9 but seeing that the 14700K is way better than the laptop i9 I had been using, the i7 seems like the way to go.
Anyways, I was looking for advice to see if this build is feasible. I will be using Microcenter's assembly service as I'm not experienced with building. The main questions I have are:
- How will this do thermally? Is the AIO water cooler neccesary or should I do air cooled? Also, since this will be a portable mobile machine, does that pose any complications in having a water cooler?
- Should I stay away from Intel 14th Gen? I've heard all the horror stories about it and I'm not sure if things are better now. Should I be checking for a specific batch number to avoid or MFG date to avoid? Or should I go AMD route? I was looking at the i9-12900k but the 14700k outperforms it quite a bit so I don't want to go too old.
