Need Help Getting Advice on Parts Choices

This PC will be for triple 1440p monitor racing simulator setup (kinda like the SimRig in Micro Center), as Euro Truck Simulator 2 and American Truck Simulator rely heavily on single core performance and do not need any ray tracing, I chose U7 265k and RX7900XTX. Any advice on parts choices? Thank you guys!

Really solid build! If possible I would stay with SSDs instead of HDDs as the read and write speed of disk drives are significantly slower than most solid state drives these days.
