Need Help Choosing Parts

Hi all, looking for some advice on this build. I've only ever built 1 PC and that was half a decade ago. I am pretty set on the GPU and wanting 64 GB of ram, but I'm unsure about all the other parts. I enjoy playing a few games in unreal engine 5, and my current PC struggles with those. Especially want to be able to run Wukong smoothly (doesn't need to be 4k - just smooth frames quick loading times).

Would love to save some money on the less vital parts, but don't want that to hinder my gaming too much either. Is the CPU I picked really necessary? Could I switch out the case or other items? Looks are not important to me, but easy assembly (not cramped) is good, because I'm less experienced.
