Need Help Choosing Parts for an Local AI platform and Remote Gaming PC

Seeking feedback on how this build could be better optimized. Is anything massive overkill or poorly advised for my needs? For AI use: aiming for 32~60B+ models, 12k token context, 4k token output at a decent pace. Remote current gen gaming at up to 4k. Docker host for Plex etc w/ data hosted on a nearby NAS. I intend to have it running 24/7.
