Upgrading Mac OS and Office for Mac--WHICH FIRST?
I've got Mohave 10.14.6, still running MS Office 2011 for Mac. I'm ready to upgrade both, but in what sequence? I understand Office 2011 WON'T FUNCTION on the new Mac OS (is that Catalina?), but if I upgrade Office first, will I be able to open docx documents until I can upgrade the OS?

Yes, if you upgrade your copy of Office first you'll still be able to open and view everything you already have available until you update your OS.
