what should I put in if I want some more storage and is this good system to run most games.

You can add a second M.2 drive or multiple 2.5" SSD's to the system. I'd grab a large 2.5" QLC SSD just for storage. With the 3600 and an RTX 2060, you'll be able to play anything out there.

Is there a graphics card that would also work because it’s sold out in MN or should I just wait a while for it be back in stock.

Any 2060 is a fine replacement for a gaming system. They have an ASUS Dual Fan model in stock.
