That's a good build overall. I would say go lower on the board, but that's a good price on an X570 board. I'd try to go for some DDR4 3600 if it's in the budget. CL16-18 is a fine, I wouldn't buy anything higher. For the NVME drive, I might look into the TLC version. I believe it's $120, but you'll get higher throughput speeds versus the QLC version.
