The motherboard doesn't really have a large impact on performance if all the hardware remains the same.  It's usually personal preference once you find a motherboard with the features that you like/want.  I would personally pick the TUF X570 since the X570 Chipset is a bit better than the B550.  The X570 supports PCIe 4.0 but it's not that it's a major jump at this moment.  Here is a great article discussing B550 Chipsets and the differences between X570; https://www.gamersnexus.net/guides/3582-amd-chipset-differences-b550-vs-x570-b450-x470-zen-3
