Power supply
I am wanting to upgrade my PC to a Ryzen 5 3600 and a Radeon Rx 5600xt. I currently have a EVGA 500B power supply. Would this be enough to powered these new parts or do I need to upgrade my power supply as well?

I would strongly recommend you get a 600W power supply minimum.

Don't forget to check if it's certified.

Yes, the EVGA 500B would be enough to power both the Ryzen 5 3600 and the Radeon RX 5600 XT.The estimated power usage for just these two parts would be around 205 Watts. You'll want a PSU that has a bit of headroom to power your periferals and save room for any other power usage spikes, so the 500w PSU would be a great fit.
