Not sure about having a 2.5 ssd and a m.2 ssd. I would assume its overkill to have both. Also do i need to add any extra case fans. Besides that a once over to make sure I have everything and its all good would be appreciated. Thank you.

Greetings. What is the intended use of the PC and your overall budget?
$5000 gaming pc dual monitors and possibly setting up streaming in the future.
For mainly gaming, I would recommend picking the latest generation of Intel processors if you wanted to stick with Intel, and put the extra money towards a 3090, or you could still just use a 3080 and save a good bit of money.
I'd recommend getting 1 extra case fan for the rear, besides that the case you have selected already has 3 front fans, plus the CPU's water cooling fans, and video card fans, you probably have enough then.
