It has been a while since I last built a PC, last time was back in 2016. It's finally time for an upgrade !
I want a PC for 1440p (possibly 4k and VR in the future) gaming and to be able to play upcoming titles such as Dying Light 2, Back 4 Blood, New World, and Atomic Heart to name a few.

I was also considering a AMD Ryzen 9 5900X CPU, should I stick with the 3900X or is the 5900X a better choice?

my budget is $3k (peripherals not included) but am willing to go over up to $3.5k
Did you plan on using this PC for any sort of editing/streaming or just mainly for gaming?

I don't see any issues, you would do just fine with either processor. If it's mainly just for gaming the 3900X is absolutely fine, if you had interests in any sort of rendering/streaming from 1 PC, then I would recommend the 5900X.
