Would I gain anything by getting the i9 over the i7?
It really depends on what motherboard/budget you have, as till today the z590 for 11th gen intel core is significantly more expensive than z490 for 10th gen intel core. And depends on if you are playing games over content creating. Most newer games are optimized for eight-core cpus. 10850k has two physical cores four threads over 11700k which would be great for content creating while 11700k with eight cores, is more efficiency on single core load which would greatly benefit gaming.
Not as much gaming or video creating/converting.
Like to get something that will last for years and not be outdated quickly.
Either one will be a great step up from my current i7-3770.
In that case I would actually suggest you to wait until 12th gen intel core comes out. There are some confusing infos about it and it seems like a big jump in intel's effort match out amd's zen3, along with the ddr5 platform and whatsoever.
And just how long will that take to come out?

UPDATE - just saw a "Fall 2021" time frame.
The question is, when will the new motherboards, etc be available to support them as well?
Typically new motherboards (or BIOS updates for current motherboards) are released at the exact same time as processor releases.
Just need to wait and find out when they are both avaliable.
And how much they will cost.
