I put this parts list together and am looking for some advice.

Your build will work fine overall. I'd see if you can find 3600 CL16 RAM at a good price in store, go for that if possible. It's not a problem if you don't. I might buy a 500GB NVME drive instead of the two drive configuration with the second larger drive with QLC NAND. You can always add a second drive later on.
