First time PC builder. Creator PC for casual use

My name is Nick, I'd like to take on the task to piece together a PC, my first time. I'm replacing a 10yo PC that still works decent, but I want a new, balanced build, where all components are at about the same performance level, not having one bottlenecking the performance, or have one that is overkill.

I plan to have 2 x 1440p displays, occasionally I would like connect a 3rd display 4k. The main daily work I do on it is word, excel, pdf with dozens of internet browsing windows open at the same time, while streaming news. On top of that, as a hobby, I like to dabble into video editing (davinci resolve) as well as 3D design in Fusion 360.

I was thinking at the following configuration:

I have a hard time deciding on a motherboard. I chose this MoBo for the thunderbolt header for future option, and for it's IO ports. The video card may be over kill? I'm also considering the lower rtx 4070 Super ($200 less). I'm pretty set on using the I7-14700k, 64Gb RAM.

Your advice is greatly appreciated.
