Personally, I'd consider going with one of the CPU/Mobo combos linked below:

Going with a combo might save you a few bucks and provide you a better processor in the meantime. I wouldn't worry about dipping from 64Gb RAM down to 32Gb for gaming.

For the monitor, I would personally swing toward the ASUS VG34VQL1B, as it'll provide you with a better quality panel and more options for fine tuning the settings.

Out of curiosity, which Micro Center is local to you? I'd be more than happy to connect you with one of the Build-Your-Own associates that way you can work with them in person :)

Speaking to the folks in-person is honestly the best way to learn and make decisions. It's also nice to see cases in person, you may even decide on a different route!
