Personally, I'd consider going with one of the CPU/Mobo combos linked below:

Going with a combo might save you a few bucks and provide you a better processor in the meantime. I wouldn't worry about dipping from 64Gb RAM down to 32Gb for gaming.
For the monitor, I would personally swing toward the ASUS VG34VQL1B, as it'll provide you with a better quality panel and more options for fine tuning the settings.
