OSX will not install on MacBook Pro 2009

Upgrading Mac OS and Office for Mac--WHICH FIRST?
I've got Mohave 10.14.6, still running MS Office 2011 for Mac. I'm ready to upgrade both, but in what sequence? I understand Office 2011 WON'T FUNCTION on the new Mac OS (is that Catalina?), but if I upgrade Office first, will I be able to open docx documents until I can upgrade the OS?

Dual Monitor MacBook Air 2019
I went into a micro center store and told the sales rep that I wanted to setup a dual monitor setup to my MacBook Air. He advised that I take a dual hdmi to usb-c adapter, but it’s not working how I expected. Instead of being able to use each monitor individually, they just mirror themselves. What do I need to change this?

I have an early 2008 iMac, works but slow. Can the HD be replaced by an SSD? How long will it take?
I am trying to decide whether to refurbish it or recycle it. I mostly use it for work, not any gaming or streaming. Other than not being able to update the OS, (it is OS X El Capitan, Version 10.11.6), it works fine. Please advise.

iMac froze while upgrading to Catalina
I was trying to upgrade my 7 yr old iMac yesterday to Catalina. It froze and not able to go back to my previous version or anything. Went online and tried all the solutions offered but no luck. Apple Support recommended service center.
